Short answer: Paramaribo's food is four cuisines that arrived with four migrations and never merged: Creole, Javanese, Hindustani and Chinese-Surinamese. The table below sorts our eighteen verified places by kitchen and tells you where they are and when they open, which is the information that actually decides where you eat. Published hours are rarer than you would expect; where a place publishes none, the table says so rather than guessing.

Creole. The Afro-Surinamese home kitchen: pom (a baked casserole of grated tayer root and chicken), moksi alesi (mixed rice), brown beans, and soups eaten as whole meals. De Gadri is the reference point for a plate of pom at lunch, with published hours and a terrace by the fort. Souposo builds a whole menu around the soups. Roline's de Waag and Baka Foto are the two places to eat Creole food with the river in front of you, and neither publishes hours, so ask before an evening.
De Gadri
De Gadri (formerly Mix Food) is the Creole eetcafé at Zeelandiaweg 1 beside Fort Zeelandia, known for pom. Open Monday to Friday 08:00–19:00, Saturday 12:00–19:00, closed Sunday. Phone +597 420-688. Daily menu posted on its Facebook page.
Souposo
Surinamese soup bar and fusion restaurant on Costerstraat in Paramaribo, serving a daily-changing soup of the day alongside a wider menu of Surinamese and vegetarian dishes.
Roline's de Waag
Roline's de Waag, Waterkant 5: restaurant and terrace in the historic De Waag weigh-house at the start of the Waterkant, serving Surinamese dishes such as pom and masala chicken alongside grill and international items. Opening hours are not published by any source we could verify.
Baka Foto
Restaurant at the Fort Zeelandia site on Abraham Crijnssenweg in Paramaribo, in a historic building beside the Suriname River. It has also traded as Museumrestaurant Baka Foto.
Javanese. Concentrated in Blauwgrond, the district in the north that began as a Javanese village. Warungs, the small eating houses often built in front of a family home, are the form; Warung Renah is one, Mirosso a few doors along is the sit-down version with a terrace. Neither publishes hours, which is normal for the category: go in the evening and ask. Sarinah is the daytime Javanese option without crossing town, open until 17:00.

Warung Renah

Sarinah
Sarinah, Verlengde Gemenelandsweg 187: Javanese restaurant open Monday to Saturday 07:30–17:00, closed Sunday (hours from a directory, not confirmed by the restaurant). Phone +597 492045. Javanese-Surinamese dishes, filled sandwiches and loempias in a garden with a pond.
Hindustani and Indian. Grand Roopram is the roti chain Surinamers name first, and its 08:00–23:00 hours make it the most reliable late plate in the city. Martin's is the other thing: an Indian, halal kitchen open daily until 23:00.

Martin's House of Indian Food
Indian restaurant at Hajarystraat 19 in Rainville, open every day from 10:00 to 23:00, which describes itself as the only authentically Indian and halal kitchen in Suriname and carries an unusually deep vegetarian menu.
Chinese-Surinamese and the rest. Chi Min is the long-established Chinese-Surinamese room in the centre. Garden of Eden cooks Thai in the evenings, one of the few kitchens here doing a cuisine that did not arrive by migration. 't Vat is where the hotel district drinks, and the only place on this list open to 02:00. Zus & Zo is the grand café near the Palmentuin.

Long-established Chinese-Surinamese restaurant on Cornelis Jongbawstraat in central Paramaribo, with a ground-floor takeaway counter and a dining room upstairs.
Garden of Eden
Thai restaurant at Virolastraat 61 in Uitvlugt, open evenings from Monday to Saturday, and one of the few kitchens in Paramaribo cooking a cuisine that is not Surinamese, Chinese or Indian.
't Vat
Long-running sidewalk cafe and bar at Kleine Waterstraat 1 in Paramaribo's hotel district, open daily from 08:00 to 02:00, with a large covered terrace, sports screens and live music.
Zus & Zo
Grand cafe and restaurant in a colonial-style building on Grote Combeweg near the Palmentuin in central Paramaribo, serving European, Caribbean and Surinamese dishes from breakfast through late evening, with a garden terrace.
Planning a day of eating
A workable pattern, built only on published hours: roti or a Javanese lunch at Sarinah (07:30–17:00) or pom at De Gadri (08:00–19:00), an early evening in Blauwgrond for warung food, and 't Vat or Roopram if it gets late. The market is the morning: the Centrale Markt on the Waterkant.
